Home made semi dried tilefish grill

Our chefs are making semi dried tile fish grill for coming May.

Tile fish is very famous as an expensive fish in Japan. The meat is very tender, moisturized and the texture is very fine.

We soak line caught tile fish into 4% salt water with Hokkaido kelp then dry slightly. All the natural flavors are sealed into the fish meat.

銀鱈の刺身/Sahimi Sablefish



Gindara (Sablefish)
Lately we are able to import fresh Gindara/銀鱈(Sablefish for Sashimi). Gindara is usually served in Saikyouyaki (西京焼), which is grilled with special Saikyou miso.

Tomoe Sushi has direct connection with seafood market in Japan therefore we can provide the freshest Gindara for Sashimi and Sushi. Sable fish lives in the cold deep sea as 300 to 700m so the meat contains lots of sweet fat and the texture is nice n' soft.
