What is Osechi??

Osechi-ryōri (御節料理 or お節料理) are traditional Japanese New Year foods. The tradition started in the Heian Period (794-1185).Osechi are easily recognizable by their special boxes called jūbako (重箱), which resemble bentō boxes. Like bentō boxes, jūbako are often kept stacked before and after use. (Ref. Wikipedia)

Nobel Scallop / 檜扇貝

We have an unique shell fish called Nobel Scallop (檜扇貝/イタヤガイ) from Kyusyu, Japan. These colorful shells are usually caught in relatively warm water.


Nobel scallop, smaller than scallops but has very colorful shell.

Shape and meat are very similar to normal scallop and good for both Sashimi and grill.
Only limited time to import and stocks are limited. For reservations, please call on 37912346.


We also have nice robin fish (Houbou) from Nagasaki, Japan. These are also in good season. Meat is tender and has full flavour. (Good for Sashimi, grill or boiled in soy sauce)

大間産 本鮪の解体/Japanese Wild Tuna

Tomorrow (8th, Fri) around 19:00, we will receive a whole small tuna (around 10kg) from Oma, Japan (青森県 大間)

Oma tuna is the most popular and variable in Japan. Nor like usual fatty tuna, this wild caught tuna has less fat but very elegant in flavor.



We are expecting the fish to arrive around 19:00 in our restaurant. Then we would like to immediately cut and prepare Sashimi in front of our guests.

This is a rare chance. Please do not miss the opportunity to taste the most famous tuna from Japan.

千葉県 大原産 一本伊勢海老!! / Japanese whole lobster treat.

千葉県 大原港(Ohara, China Prefecture) is known as the biggest lobster haul in Japan. Now the lobster season has come. Lobsters are known as a "lucky" ingredient in Japan therefore it is used in the most of new years cuisines in the country.



Now we are importing small live lobsters (Around 100g) from Ohara. We serve the lobster in special 3 ways :

and miso soup with lobster head

Kinki Shabu Shabu/喜知次のしゃぶしゃぶ

It is becoming the best season for Kinki (喜知次)!!

Of course Sashimi is the best way to taste the fish but also, Shabu Shabu (hotpot) is recommended for the cold winter to boost up the taste of Kinki.

Fatty Kinki meat and Ponzu (Vinegared Soy sauce) match really excellent. This special Kinki hot pot is only available by reservations.

GARI home made Tomoe style/ガリの作り方

What is GARI??

GARI is vinegared ginger and it is probably the most important side dish for Sushi. We can almost say that a Sushi bar can not operate business without GARI.

We are also very careful with making our GARI. It is simple to make that's why even a small mistake make the whole taste and texture different.

Here is how to make GARI. Please try at home!!

Young ginger = 200g
Vinegar = 100CC
Red vinegar = 1 teaspoon
Sugar = 40g
Salt = 1/2 spoon



1. Wash young ginger and cut off stem parts




2. Peel off skin


3. We soak our ingredients in HOTATE powder (Scallop shell power) to remove chemicals and darts. Making sure we deliver safe food to our guests.


4. Slicing up gingers

5. Cook in salted boiled water for approx 3 min

6. Cool them down in room temperature and squeeze out water


7. Then pickle into the sugared vinegar for 1 day. Ready to eat!!


The freshness and texture are totally different to the ones in plastic bag at super markets. Lets make GARI and try home sushi party.

秋刀魚(Pacific saury) means "Japanese sword shaped fish caught in Autumn" in Japanese. As the word describes, this is the best season for Pacific saury from Japan.

Fresh fish imported before the storm arrives..

We just had fresh Aji (池魚), iwashi (鰯魚), Sanma (秋刀魚), Hokki (北寄貝), Botan shrimp (牡丹海老) and the famous Sajima Octopus (真蛸) arrived from Japan just before the storm Usagi lands in Hong Kong.






According to HK Observatory, the storm signal will go upto no. 8 tomorrow. Everyone, stay safe.

佐島の真蛸 / Live Octopus from Sajima, Japan

Probably, Japanese are one of the most octopus lovers in the world. We have two very famous ports for octopus, one is Akashi (明石 Near Kobe) and Sajima (in 神奈川 Kanagawa).

Summer is the best season for octopus from Sajima since they are preparing to lay eggs spawn so they are fat!! We are very luck to have a stable supply of the octopus from Sajima these days. We import them in live to Hong Kong and prepare in house to deliver the freshest.

To make the meat softer, we will hand massage the octopus at least half an hour. 





The meat is soft and sweet.

Japanese crimson (Porgy) sea bream in vinegar sauce

Japanese crimson sea bream (Tidai, 血鯛) is in season. We import those sea bream from Kyusyu, Japan and marinaded in special rice vinegar sauce.

This is excellent match with 吟醸酒 (Ginjo sake), served in Sashimi or Sushi.




These fish are only available for next one month. Please come in and try.

Icy cold Japanese plum juice (Home made)

夏、さっぱり自家製梅ジュース! 
爽甜冰凍梅汁(無酒精)

It is getting so humid and hot everyday here in Hong Kong.
Today, we are introducing our home made fresh plum juice to crush your thirst!!


Green young plums are only available for very short period of end May to early June. We directly import freshly picked green plums from Kyusyu (九州) and Kisyu (紀州).


We pickle those plums at least 2 weeks to extract juice from plums. Then the flavour becomes crispy and sour!


100% no preservatives added!! (Non alcoholic)

鮪のカマ焼 (Grilled tuna neck meat / 焼呑拿魚頚)



Meat of tuna in between face and fin (We call this tuna neck and called KAMA in Japanese) contains more fat than "O-toro". We are able to import directly from 築地 (Tsukiji) market!!
 
 
 
Grilled with salty seasoning and dip into ginger soy sauce when you eat. Sweet fat and tuna flavour hit your nose!!
 

Since the meat is big and thick, It will take around 20 to 30 min to cook.

From spring to summer, it is the best season for Japanese red snapper. Also spring and summer are spawning season for the snapper therefore milt and roe are the best to eat now!!!

We import extremely fresh milt from Japan and served in grilled or boiled in Ponzu sauce at your preference. It melts in your mouth, as creamy as yogurt and slight sweetness at the end.

Nobu san A.K.A "Sushi Samurai" loves to drink 芋焼酎 (Poateto liquor)

Our Sushi chef "Sushi Samurai" Nobu Yoshitomi has learned his Sushi making in Kobe, Japan. He is originally from Kagoshima (鹿児島) where produces famous black pork and potato liquor, and also his father used to be a sushi chef as well. The true Sushi blood!
